Why Compliance Matters
Running a successful restaurant is about more than just a great menu - it also means staying on top of essential health, safety, technical and land-use requirements. Keeping your certificates up to date is the best way to protect your business from avoidable fines or insurance complications, ensuring your doors stay open and your guests stay safe.
Whether you are launching a new dining concept or auditing your current operations, your compliance strategy must cover five core legal pillars.
1. Health and Food Safety
Certificate of Acceptability (CoA): Issued after a premises inspection. Proves your kitchen layout, sanitation, ventilation, storage, and pest control meet mandatory public health standards.
Food Safety Supervisor & Handler Certs: Mandatory proof that designated kitchen managers and food-handling staff have completed accredited food safety and hygiene training.
2. Building and Fire Safety
Fire Protection Certificate: Confirms your premises has functioning fire suppression systems (e.g., kitchen hood Ansul systems), compliant fire extinguishers, emergency lighting, and clear emergency exits.
Certificate of Occupancy: Issued by the municipal building department, confirming the building structure is safe and legally approved for commercial dining.
OHS Compliance Certificate: Verifies workplace compliance with labor safety regulations, including hazard assessments, staff safety protocols, and first aid readiness.
3. Technical & Utility CoCs
Electrical CoC: Certified by a registered electrician, proving all wiring, distribution boards, and heavy appliances meet national safety standards.
Gas CoC: Mandatory if using gas equipment. Issued by a registered gas practitioner to confirm leak-free installations and proper bottle storage.
Grease Trap / Trade Effluent Permit: Certifies your kitchen possesses a compliant grease trap system to prevent fats, oils, and grease (FOG) from polluting municipal wastewater.
4. Business Operations & Land Use
General Business / Trading License: Your foundational municipal permit allowing commercial food and beverage trading at that specific address.
Zoning / Land Use Approval: Confirms the property is legally zoned for commercial restaurant use.
5. Specialized Operational Licenses
Liquor License: Mandatory to store, serve, or sell alcohol on-premises.
Music / Copyright License: Required from music rights organizations if playing background music, live music, or broadcast TV/radio.
Sidewalk / Outdoor Seating Permit: Required if operating a patio or dining area on public property.
